NOW Real Food® Xanthan Gum is a widely used natural thickening agent: a tiny amount noticeably thickens liquids, and it stays stable across a wide range of temperatures and acidity. It keeps oil from separating in dressings, holds spices in suspension and gives sauces a smooth texture; in gluten-free baking it helps bind dough.

Directions
Use a small amount – typically ¼–½ teaspoon per cup of liquid or gluten-free flour. Mix with dry ingredients first to avoid lumps.
Warnings
Not for use in foods or drinks for infants and children under 2 years. Store in a cool, dry place.
